CHICKEN PARMESAN 
1/3 c. grated Parmesan cheese
1/4 tsp. Italian seasoning
3 whole med. chicken breasts skinned, boned and halved lengthwise
1/4 c. sliced green onion
2 tsp. butter
1 tbsp. all purpose flour
1/2 c. skim milk
1/2 of a (10 oz.) pkg. frozen chopped spinach, thawed and drained
1 tbsp. chopped pimiento

In a small mixing bowl combine Parmesan cheese and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside.

Arrange chicken pieces in an 8 x 8 x 2 inch baking dish. In a small saucepan cook onion in hot butter until tender. Stir in flour; add milk all at once. Cook and stir until bubbly; stir in drained spinach and pimiento.

Spoon spinach mixture over chicken; sprinkle with remaining cheese mixture. Bake, uncovered, in a 350 degree oven for 30 to 35 minutes or until tender. Makes 6 servings.
