TUNA AND NOODLES PARMESAN 
4 oz. spinach or regular med. noodles (3 c.)
6 1/2 oz. can Albacore tuna (drained and flaked)
4 oz. can mushroom stems and pieces (drained)
1 c. onion (chopped)
10 3/4 oz. can cream mushroom soup
1/3 c. Parmesan cheese
2 tbsp. water
5 oz. can evaporated milk
2 tsp. lemon juice

Cook the spinach or noodles according to directions. Drain. Meanwhile, in 1 1/2 quart microwave-safe casserole combine onion and water. Micro-cook them covered on high power for 3 to 5 minutes until onion is crisp-tender; drain. Stir the soup, milk, Parmesan cheese and lemon juice into onion mix. Fold the tuna, mushrooms and noodles into soup mixture. Cook, uncovered, on high for 7 to 9 minutes (low wattage ovens for 10 to 12 minutes) or until the mixture is heated through, stirring every 4 minutes. Sprinkle with additional Parmesan cheese before serving. Makes 4 or 5 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
