SQUARE MEAT BALLS SERVED WITH
PARMESAN OLIVE NOODLES
 
1/2 c. finely cut raw onion
1 egg, lightly beaten
1 tsp. salt
1/4 c. fine bread crumbs
1 lb. ground round steak
1 pkg. frozen spinach, cut in pieces
1/4 c. flour
1/4 tsp. paprika
1/4 c. oil or shortening
1 (10 1/2 oz.) can tomatoes soup
2/3 c. burgundy or other red table wine
1/2 tsp. oregano

Combine onion, egg, salt, pepper, crumbs, beef, and thawed spinach (drain off excess liquid). Mix well with hands. Combine flour and paprika. Sprinkle half on board. Put meat in floured board; sprinkle with remaining flour and cut into squares. Brown in heated oil; drain and add soup, wine, and oregano. Cover and simmer 30 minutes. Serve with Parmesan olive noodles.
