CHICKEN PARMIGIANA 
3 whole boneless chicken breasts
2 eggs, slightly beaten
1 tsp. salt
Dash pepper
3/4 c. dry bread crumbs
1/2 c. vegetable oil
2 c. tomato sauce
1/4 tsp. basil
1/8 tsp. garlic powder
1 tbsp. butter
1/2 c. grated Parmesan cheese
1 (8 oz.) pkg. Mozzarella cheese, sliced into triangles

Pound chicken until 1/4" thick. Combine eggs, salt and pepper. Dip chicken into mixture, then into crumbs. Brown chicken in oil. Drain remaining oil. Mix tomato sauce, basil and garlic powder, add melted butter, pour over chicken. Sprinkle with Parmesan cheese. Bake at 350 degrees, uncovered until done. Last few minutes add Mozzarella cheese. Serves 6.
