CHICKEN PARMIGIANA 
3 whole chicken breasts, boned
2 eggs
1/4 c. grated Parmesan cheese
1/4 tsp. parsley
1 tsp. salt
1/4 tsp. pepper
Italian bread crumbs
1/3 c. olive oil
Ragu marinara sauce
6 slices Mozzarella cheese

Split chicken breast and flatten like a cutlet (hammer them a bit). Dip chicken into mixture of eggs, cheese, parsley, salt and pepper. Then dip in bread crumbs. Brown on both sides in 1/3 cup olive oil. Place in casserole and spoon Ragu sauce over. Place Mozzarella over each cutlet and bake 30 minutes at 350 degrees. Serves 4 to 6.
