CHOCOLATE CARROT CAKE 
2 c. all purpose flour
1 1/2 c. sugar
1 c. salad oil
1/2 c. cocoa
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 c. shredded carrots
1 (3 1/2 - 4 oz.) can flaked or shredded coconut

In mixer on low speed, beat until blended, flour, sugar, oil, cocoa, baking soda, salt, cinnamon and vanilla. Increase speed to high and beat 2 minutes. Mix with spoon the carrots and coconut. Pour into greased and floured 10" bundt pan. Bake at 350 degrees for 50 to 55 minutes.
