RHUBARB BARS 
3 c. cut up rhubarb
2 tbsp. cornstarch
1/4 c. water
1 1/2 c. white sugar
1 tsp. vanilla
1 1/2 c. quick oatmeal
1 1/2 c. flour
1 c. brown sugar
1/2 tsp. baking soda
1 c. butter or shortening
1/2 c. walnuts, optional

Dissolve cornstarch in water. Mix in rhubarb, white sugar and vanilla. Cook until thick. Set aside to cool. Mix oatmeal, flour, brown sugar, soda, shortening and walnuts until crumbly. Pat 3/4 of mixture in 9 x 13 inch pan. Add cooled rhubarb mixture on top. Add remaining crumbs. Bake at 375 degrees for 30-35 minutes. Cool and cut into bars.
