PORK CUTLETS WITH MUSHROOMS 
6 to 8 cutlets
1 (8 oz.) pkg. mushrooms
2 lg. peeled tomatoes
1 c. chicken broth
1/2 c. red wine
1/2 c. chopped onion
1 clove chopped garlic
1 tbsp. basil
1 tbsp. parsley

Brown cutlets and set aside. Brown onion, garlic, and sliced mushrooms. Add wine, chicken, broth, and chopped tomatoes. Cook 30 minutes. Return cutlets to pan. Add basil and parsley; continue cooking until cutlets are tender.
