FESTIVE ITALIAN QUICHE 
1 (9 inch) pie shell
2 tbsp. oil
2 c. chopped zucchini
1/2 c. chopped onion
1 minced cloves garlic
1 1/4 c. shredded Mozzarella
3 beaten eggs
1 c. cottage cheese
1/3 c. milk
1/2 tsp. salt
Dash of pepper

HERBED TOMATO SAUCE:

1 (15 oz.) can tomato sauce
1 tbsp. parsley flakes
1 tsp. oregano
1/2 tsp. basil, crushed
1 minced clove garlic
Salt and pepper, to taste

Preheat oven to 350 degrees. Bake crust for 10 minutes. Cool. Increase oven to 375 degrees. Heat oil. Add zucchini, onion, garlic, and saute for 10 minutes. Spread in pie shell. Mix 1 cup Mozzarella with eggs, cottage cheese, milk, salt and pepper. Spoon over vegetables. Sprinkle with remaining 1/4 cup Mozzarella. Bake 40 minutes. Serve with Herb Tomato Sauce. (Simmer sauce for 15 minutes). Garnish with parsley.
