ORANGE POTATO BREAD | |
2 3/4 c. sifted all purpose flour 2 1/2 tsp. baking powder 3/4 tsp. salt 1 tbsp. salad oil 1 1/4 c. fresh orange juice 2/3 c. riced cooked potatoes 1 c. sugar 1 tsp. baking soda 1 egg 1/2 tsp. vanilla 1 tbsp. grated orange rind 1/2 c. chopped nuts In large bowl sift together flour, sugar, baking powder, baking soda and salt. In small bowl, beat together egg, oil, orange juice, orange rind and vanilla. Stir in prepared potatoes. Add orange mixture all at once to dry ingredients and stir to mix well. Sift in nuts. Turn into greased 9"x5"x3" loaf pan. Bake in 325 degree oven for 60 minutes until cake tester inserted comes out clean. Cool 10 minutes. Remove from pan and cool completely. Yield: 1 loaf. |
