TOMATO MACARONI AND CHEESE 
8 oz. uncooked macaroni
1 c. chopped onion
1 qt. tomatoes & juice, canned or fresh
1 (6 oz.) can tomato paste
1 tsp. dried basil
1 tsp. salt
1 (8 oz.) carton cottage cheese
1/2 lb. cubed cheddar cheese
1/2 tsp. oregano

Cook macaroni according to package directions and drain. Mix onion, tomatoes, tomato paste, basil and salt together. Add cottage cheese and mix gently. Add cheddar cheese and mix gently. Mix with macaroni, and place in greased casserole. Sprinkle oregano on top. Bake in 325 to 350 degrees for 30 minutes or until heated and bubbly. Serves 6 to 8.
