VEGGIES 
1/2 c. chopped celery
1/2 c. chopped onion
2 lb. bag frozen mixed veggies
1 can water chestnuts, drained
1 c. mayonnaise
1 c. sharp Cheddar cheese

TOPPING:

1-2 bags Ritz crackers
1 c. melted butter

Boil veggies 3 minutes. Drain. Mix veggies with celery, onion, chestnuts, mayonnaise and cheese. Top with crackers and pour butter over top. Bake 350, 20 minutes.
