WHITE DELIGHT CAKE 
5 eggs, separated
2 c. sugar
2 c. flour
1/2 c. (1 stick) butter
1/8 tsp. salt
1/2 c. shortening
1 tsp. baking soda
1 c. buttermilk
1 can flake coconut
1 can chopped pecans (optional)

Mix all the dry ingredients together well. In a bowl cream shortening and the sugar together. Add egg yolks and beat well. Then add buttermilk to this alternately with the dry ingredients. Stir in coconut and pecans. Beat egg whites until stiff and fold into batter. Bake 40 minutes at 350 degrees or until done.

ICING:

8 oz. pkg. cream cheese
1 box powdered sugar
1 stick butter
1 tsp. vanilla

Soften cream cheese. Blend the butter with the cream cheese. Add the sifted powdered sugar a little at a time until all is blended. Add the vanilla and beat until smooth.
