PECAN CHEESECAKE BARS | |
CRUST & TOPPING: 1 c. flour 1/3 c. butter, softened 1/2 c. dark brown sugar 1/2 c. pecans, shelled, chopped FILLING: 8 oz. cream cheese, softened 1/4 c. sugar 1 egg 2 tbsp. milk 2 tbsp. lemon juice 1/2 tsp. vanilla To make crust and topping: Preheat oven to 350 degrees. Place flour, butter, brown sugar and pecans in a food processor or blender and blend at low speed until crumbly. Reserve 1 cup of mixture for topping. Pat remaining mixture into bottom of an 8" ungreased square pan. Bake 8 minutes or until set. Remove from oven and set aside. To make filling and assemble: In a large mixing bowl, place cream cheese and sugar and combine. Beat in egg. Add milk, lemon juice and vanilla. Blend until smooth. Pour over crumb mixture in pan. Top with reserved crumb mixture. Bake for 25 minutes or until golden brown. Remove from oven and cool. Refrigerate and cut into bars before serving. Makes 12 (1/2") bars. |
