BLACK BEANS OVER RICE 
Med. onion, diced
2 cloves garlic, minced
16 oz. can black beans
14 oz. stewed tomatoes
8 oz. whole tomatoes
1 1/2 tsp. chili powder
1 tsp. cumin
1/2 tsp. red pepper flakes
Salt
Oregano
Rice

Spray skillet with Pam. Saute onion and garlic for 2 minutes. Stir in rinsed and drained beans, both cans of tomatoes with all the liquid and all the spices. Boil, reduce heat; simmer with cover on for 5 minutes. Serve over cooked rice.
