BUCKETS OF BRAN MUFFINS | |
3 c. All Bran cereal 2 c. boiling water 4 eggs 1 qt. buttermilk 3 c. sugar 1 c. shortening 2 tsp. salt 5 c. flour 2 tbsp. baking soda 2 c. raisins, golden are good 4 c. bran flakes Pour boiling water over All Bran in large bread-making bowl. Add eggs and mix well. Stir in buttermilk, salt, soda and flour; mix well. Mix together sugar and shortening and add. Add golden raisins and bran flakes and mix only until moistened. Fill greased muffin cups (do not use paper) 2/3 full and bake only as many as you need at 400 degrees for 15 to 20 minutes. Watch time carefully. Keep dough covered in refrigerator and bake whenever you want them! |
