GREEN TOMATO RELISH 
Green tomatoes (chop or coarsely grind in food processor enough to fill a gallon container)
6 lg. green bell peppers
6 med. spanish (yellow) onions
1 qt. Heinz cider vinegar (5% acidity)
2 c. sugar
1 tbsp. ground mustard
1 tsp. black pepper
2 tsp. ground cloves
1/2 tsp. cinnamon

Sprinkle about 3 to 4 tbsp. salt over tomatoes and let stand all night. Coarsely chop onion and bell pepper.

Pour vinegar in a large pot. Add sugar and spices and mix well. Then add chopped tomatoes and vegetables. Bring to a boil. Then simmer gently for exactly 45 minutes.

Pour cooled mixture into 6 sterilized pint jars remove any air bubbles, clean rims of jar with hot water cloth. Seal. Process in hot water bath 10 minutes.
