CHOCOLATE CHIP ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. vegetable oil
2 c. grated zucchini
3 tsp. vanilla extract
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. double acting baking powder
3 tsp. cinnamon
1 c. ground walnuts
1 pkg. chocolate chips or mini chips

Beat the eggs until light and foamy. Add the sugar, oil, zucchini and vanilla; mix lightly but well.

Combine the flour, salt, soda, baking powder and cinnamon; add to the egg-zucchini mixture. Stir until well blended. Add nuts and chocolate chips. Pour into two 9 x 5 x 3 inch loaf pans. Bake in a preheated 350 degree oven for 1 hour. Cool on a rack.
