MUSHROOM AND WALNUT SAUCE 
2 tbsp. olive oil
3 cloves garlic, minced
4 scallions, sliced (include green tops)
1/2 lb. fresh mushrooms, sliced
1/4 c. chopped walnuts
1 c. tomato sauce
1 c. canned crushed tomatoes
1 tbsp. dried basil
1/4 tsp. freshly ground black pepper

In a large skillet, heat the oil and saute the garlic and scallions for 30 seconds. Add the mushrooms and stir-fry for 1 minute. Stir in the walnuts and cook for 1 minute.

Add the tomato sauce, tomatoes, basil, and pepper. Cook for 5-10 minutes. Serve over hot pasta. Yield: 2 1/4 cups. Time: 15 minutes.
