LIMERICK APPETIZERS | |
FILLING: 3/4 finely chopped, cooked chicken 1/3 c. finely chopped celery 2 tbsp. chopped pimiento 2 tbsp. mayonnaise or salad dressing 1/8 tsp. salt Dash pepper Fresh pea pods, blanched if desired 1 med. cucumber In small bowl, combine all filling ingredients; mix well. Cover; refrigerate 1 to 2 hours to blend flavors. Cut cucumbers into 1/4" thick slices. Spoon or pipe 1 rounded teaspoonful filling evenly into each pea pod or spread or pipe 1 rounded teaspoonful filling on each cucumber slice. 2 to 2 1/2 dozen appetizers. TIPS: To blanch pea pods, place pods in strainer and immerse in boiling water 1 minute or until pea pods are bright green; remove and chill immediately in cold water. |
