SMOTHERED CHICKEN | |
3-4 lb. chicken parts Onion and garlic powder 1 onion Parsley Salt and pepper 12 oz. water Oil 2-3 lg. potatoes Lg. pot with lid Wash and drain chicken. Sprinkle chicken with onion powder, garlic powder, salt and pepper. Put just enough oil in pot to barely cover bottom. Brown chicken on both sides. Do not allow it to burn. Use medium heat. Lower if necessary. After chicken is brown, set aside on a plate. Peel potatoes and slice about 1/2 inch thick and brown on both sides. Remove and set aside. Chop onion and saute in same pot until clear and tender. Put everything back into pot. Sprinkle more onion powder, garlic powder, salt, pepper, and parsley to taste and add water. Cover and bring to a boil. Lower heat to medium low. Cook for 1 hour. Stir and taste gravy every 15 minutes. If water cooks down to much add more. Serve gravy over rice. |
