ICED RED VELVET CAKE 
1 1/2 c. sugar
2 1/4 c. flour (self-rising)
1 c. buttermilk
1 tsp. vinegar
1 lg. bottle red food color
2 eggs
1 c. oil (Crisco)
1 tsp. vanilla
2 tsp. cocoa
1 tsp. baking soda

Beat eggs, then add sugar, oil, vinegar, and beat well. Sift flour and baking soda together. Alternate with other ingredients, then add vanilla, and food coloring. Beat well. Bake at 350 degrees for 25 minutes. Makes 3 layers.

ICING:

1 box confectioners' sugar
1 c. chopped nuts
1 stick butter
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla extract

Cream butter and cheese, then add other ingredients. Mix well and spread over all layers of cake and on sides.
