CARROT CAKE | |
4 eggs, slightly beaten 2 tsp. cinnamon 2 c. sugar 2 c. flour 1 tsp. salt 3 c. finely grated carrots 1 1/4 c. Wesson oil 2 tsp. baking powder 2 tsp. baking soda 1/2 c. nuts (or pecan meal) Mix all ingredients together at once. Line three 9-inch pans. Bake in 325 degree oven about 25-30 minutes. Do not overbake. ICING: 8 oz. pkg. cream cheese 1 box powdered sugar 1/2 stick butter 1 tsp. vanilla Soften cream cheese and butter; whip together. Add sugar gradually; add vanilla. |
