FLUFFY LEMON PIE 
3 med. eggs, separated
Artificial sweetener to equal 14 tsp. sugar, divided
2 tbsp. cold water
Juice & grated rind of 1 lemon
Few grains salt

Beat egg yolks thoroughly with artificial sweetener to equal 8 teaspoons sugar. Stir in water and lemon. Cook in double boiler until thick. Remove from heat and add salt and remaining sweetener to equal 6 teaspoons sugar to egg whites and beat until stiff. Fold into hot egg yolk mixture. Fill 8" non-stick pie plate. Bake in 350 degree oven until top is lightly browned. Makes 3 servings (lo-cal).
