FREEZER STRAWBERRY JAM 
6 (8 oz.) freezer-safe, dishwasher-safe, containers with tight lids
1 qt. fully ripe strawberries
4 c. sugar
2 tbsp. orange juice
1 (1 3/4 oz.) pkg. powdered fruit pectin

1. Prepare containers by washing in hot soapy water or dishwasher.

2. In large bowl with potato masher, crush enough strawberries to make 2 cups fruit. With rubber spatula, stir in sugar and orange juice until thoroughly mixed; let stand 10 minutes.

3. In 1 quart saucepan over medium heat, heat pectin and 3/4 cup water to boiling; boil 1 minute, stirring constantly. Stir pectin mixture into fruit; continue stirring for 3 minutes. A few sugar crystals will remain.

4. Ladle mixture into container to 1/2 inch from top; cover containers with lids. Let stand at room temperature for 24 hours or until set. Freeze. Or for use within 3 weeks, store in refrigerator.

Makes 6-8 ounce containers.
