EASY CHICKEN STEW 
1 lg. onion, chopped
2 whole chicken breasts, skinned and boned
1 (14 1/2 oz.) can and 1 (10 3/4 oz.) can chicken broth
1 lg. bag frozen mixed vegetables
2 (10 3/4 oz.) cans potato soup
Salt and pepper to taste
Fresh mushrooms, sliced or 1 can sliced mushrooms
1 tbsp. coriander or to taste

In large kettle, saute onions until soft. Cut chicken breasts into large bite size pieces. Add to onions and saute until chicken is slightly brown. Add broth and let simmer about 10 minutes. Add mixed vegetables and continue cooking 15 minutes. Add potato soup and salt, pepper, and coriander to taste. Add mushrooms and continue cooking until mushrooms are done.
