MEXICAN CORN BREAD MEAT DISH 
1 c. yellow cornmeal
2 eggs, well beaten
1 c. sweet milk
1/2 tsp. baking soda
3/4 tsp. salt
1 (#303) can cream style yellow corn
1/2 c. bacon drippings

Mix and set aside, and the milk is sweet, not sour. Saute 1 pound ground meat in extra drippings. Drain on paper towel. Prepare and set aside the next 3 ingredients:

1 lg. onion, finely chopped
1/2 lb. rat cheese, grated
4 canned jalapeno peppers, chipped

Mix all together and bake 45 to 50 minutes.

Makes a long loaf pan. Bake at 400 degrees.
