1 qt. heavy cream 3 eggs 1 oz. almond extract 1 oz. light rum 1 c. sugar (ex. fine) 6 macaroons, crumbled 1/2 c. walnuts, finely chopped Maraschino cherries Place large mixing bowl and beaters in refrigerator until cold. Beat heavy cream at medium speed until it thickens. Add all other ingredients except cherries and nuts and beat at high speed until batter forms stiff peaks. Spoon into fancy paper cups. Sprinkle nuts over the tops and add a cherry. Serves at least 20, depending on the size of the cups. Can use rum extract. |
