DESSERT OMELET 
6 seedless white grapes, halved
8 fresh strawberries, quartered
1 banana, sliced
1 c. sour cream
4 eggs
2 tbsp. orange juice
1/2 tsp. orange rind
1 tsp. cinnamon
2 tbsp. butter

Mix together grapes, strawberries, banana, and sour cream; set aside. Lightly beat eggs, adding orange juice, orange rind and cinnamon. Melt butter in a medium size skillet or omelet pan. Pour in eggs and cook over medium heat, lifting edges and allowing eggs on top to run off onto bottom of the pan. Cook for about 5 minutes or until omelet is firm. Place sour cream and fruit mixture on one side of omelet. Fold other side over it. Serve immediately. Serves 4.
