DRIED BEEF CASSEROLE 
6 med. potatoes
1/4 lb. dried beef
2 tbsp. bacon drippings
2 tbsp. flour
2 c. milk (skim or 1%)
1 c. grated cheese (1/4 lb.)
1/2 c. bread crumbs
1 tbsp. fat or oil, melted

Cook potatoes with skins on. Shred dried beef and brown in bacon drippings. Blend in flour and add milk gradually. Stir constantly until the mixture thickens. Put in grated cheese and stir over low heat until it melts. Peel potatoes and slice into a greased casserole alternating with layers of dried beef mixture.

Toss bread crumbs in fat and brown. Sprinkle over the top of the casserole. Bake at 375 degrees for 20-30 minutes.
