TACO CASSEROLE 
1 (6 oz.) Frito's (or more as desired)
1 1/2 lbs. lean ground beef
1 can chili beans
8 oz. mozzarella cheese, grated
1 med. onion or green onions, chopped
2 green peppers, chopped
2 tomatoes, chopped
1/2 head lettuce, shredded
1 (8 oz.) can mild enchilada sauce
1 (8 oz.) can tomato sauce
1 (8 oz.) can taco sauce

Heat Frito's in 9 x 13 pan until crisp. Brown ground beef and drain. Sprinkle beef over Frito's. Heat beans, drain and spread over ground beef. Sprinkle half the cheese over beans. Add lettuce, tomatoes, peppers and onions. Heat sauces together and pour over top. Sprinkle with remaining cheese - serve immediately. Recipe may be made "hotter" by using hotter versions of the sauces, but watch it!
