COCONUT CRUNCH APPLE PIE | |
CRUST: 1 1/2 c. all-purpose flour 1/2 tsp. salt 1/2 c. shortening 5 to 6 tbsp. cold water 1/4 c. shredded coconut FILLING: 4 c. peeled and sliced apples 1/2 c. sugar 1/2 tsp. cinnamon 2 tbsp. all-purpose flour TOPPING: 1/2 c. all-purpose flour 1/4 c. brown sugar, packed 1/2 tsp. cinnamon 1/4 c. butter, softened 1/2 c. shredded coconut 1/2 c. chopped walnuts Mix together flour and salt. Cut in shortening until the size of small peas. Mix in water by tablespoons until a soft dough is formed. Roll out dough on a floured board. Sprinkle with coconut and roll in. Place crust into 9-inc pie pan. Flute edges or press with fork tines. Mix filling ingredients and turn into crust. Mix flour, brown sugar and cinnamon. Mix in butter, then coconut and walnuts. Sprinkle evenly over pie. Bake pie at 400 degrees for 40 to 45 minutes. Allow to cool before cutting. One 9-inch pie. |
