GERMAN POTATO SALAD | |
4 medium potatoes, cooked, jackets on until tender, drain, cool slightly, peel when cool enough to handle, cut into small cubes 2 tbsp. bacon chips 1 sm. onion, chopped 1 med. green pepper, chopped 3/4 c. celery, chopped 1/2 c. water 1/3 c. vinegar 1 tbsp. sugar 2 tsp. flour 1/4 tsp. pepper 2 lg. hard cooked eggs (discard yolks, bad!) chop whites 1. In heavy saucepan combine water, vinegar, sugar, flour and pepper, whisk over medium heat until just comes to a boil. (2 to 3 minutes). 2. Combine potatoes, onion, celery and green pepper. Pour hot dressing over and toss well. Cool to room temperature. When ready to serve add egg whites and bacon chips. |
