NEW MEXICO CASSEROLE 
1 1/2 lbs. ground beef
1 lg. onion, chopped
1 lb. mild cheese, grated
1 med. can tomatoes
1 tbsp. red chili powder
1 pkg. (12) corn tortillas
1 sm. can pinto beans
1 (4 oz.) can green chiles (chopped)
1 can mushroom soup
4 chopped green onions
Salt and pepper to taste

Preheat oven to 350 degrees. Grease lightly a 9 x 13 casserole. Cook ground beef and season with salt, pepper, and red chili powder. Layer 1/2 or tortillas, torn into pieces; pour meat onto tortillas. Add chopped onions, beans, cheese, and remainder of tortillas, torn in pieces.

Add chiles. Mash tomatoes (using fork) using liquid, and pour evenly over the mixture. Add heated mushroom soup. Top with the chopped green onions. Bake 1 hour.

Drain excess grease.
