2 1/3 c. sifted cake flour 2 1/2 tsp. double acting baking powder 1/2 tsp. salt 2 tsp. sugar 5 tbsp. milk or light cream 6 tbsp. shortening 2 eggs 2 tbsp. sugar Start heating oven to 450 degrees. Into bowl sift flour, baking powder, salt and 2 teaspoons sugar. With pastry blender cut in shortening until like cornmeal. Add milk, separate 1 egg, reserve 1 tablespoon white; beat rest of egg with second egg; add to flour. On lightly floured surface, roll dough 1/2" thick. Cut into 3" squares; cut each square into 2 triangles. Arrange on greased cookie sheet; brush with 1 tablespoon egg white, slightly beaten; sprinkle with 2 tablespoons sugar. Bake 10 to 15 minutes or until done. Serve hot (for luncheon, supper or tea). Makes about 10. |
