ITALIAN POACHED FISH 
1 1/2 lb. lean fish fillets
3 tbsp. olive oil
3 tbsp. chopped parsley
2 cloves garlic, minced
Salt & pepper to taste
1/8 tsp. oregano

Place oil in deep frying pan, heat over medium flame. Add parsley and garlic. Saute for approximately 5 minutes. Add 1 1/2 cups water, oregano, salt and pepper. Bring to a boil. Lower heat and simmer for 10 minutes.

Add fish. Cover. Bring to boil. Reduce heat and simmer 5-10 minutes, depending on thickness of fillets. Remove fish to heated platter. Turn heat to high and reduce liquid to about 1/2 cup. Pour over fish and serve immediately. Serves 4.
