VEGETABLE RICE 
3/4 c. thinly sliced green onions
2 tbsp. vegetables oil
1 c. uncooked long grain rice
1/2 c. minced green pepper
1/4 c. minced fresh parsley
2 c. water
2 tsp. chicken flavored bouillon granules
1/4 tsp. pepper
Green onion fan

Sauté green onions in hot oil in a large skillet until tender. Add rice, minced green pepper, parsley, water, bouillon, and pepper. Cover and simmer 20 minutes or until rice is tender and liquid is absorbed. Garnish with green onion fan.

Yields: 4-6 servings.
