ZUCCHINI SQUASH CASSEROLE 
3 med. size zucchini squash
1 bell pepper
1 med. size onion
1 button garlic
3 eggs
1/2 c. water
3 tbsp sp. butter
1 c. Jack cheese, grated
Salt to taste

Slice zucchini, pepper, onion and garlic in frying pan. Add water, butter, salt and a dash of pepper. Simmer slowly until tender, and still a bit of liquid left. Put in baking dish, add beaten eggs and part of the cheese. Sprinkle the rest of cheese over the top. Bake at around 375 F until eggs are cooked and cheese is browned. Serve hot.
