ITALIAN BROCCOLI CASSEROLE | |
2 (10 oz.) pkg. frozen cut up broccoli 2 beaten eggs 1 can Cheddar cheese soup, undiluted 1/2 tsp. dried oregano, crushed 1 (8 oz.) can tomatoes, cut up 3 tbsp. grated Parmesan cheese Cook frozen broccoli in unsalted boiling water 5 to 7 minutes. Drain well. Combine eggs, Cheddar cheese soup, and oregano. Stir in tomatoes and broccoli. Turn vegetable cheese mixture into 10 x 6 x 2 inch baking dish. Sprinkle with Parmesan cheese. Bake uncovered at 350 degrees for 30 minutes or until heated thoroughly. Serves 6 to 8. |
