APPLE CAKE WITH CREAM CHEESE
FROSTING
 
2 eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
4 c. diced apples
1 c. chopped walnuts

Beat eggs until light and fluffy. Gradually add sugar, oil and vanilla. Sift together flour, salt, baking soda, cinnamon and nutmeg. Add to mixture. Stir in apples and nuts. Bake at 350 degrees for 45 minutes in 13"x9" pan. Cool 10 to 15 minutes and spread with frosting.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese, room temperature
3 tbsp. butter, softened
1/2 tsp. vanilla
1 1/2 c. confectioners' sugar
Pinch of salt

Mix until smooth. Spread on warm cake.
