APPLE CAKE WITH CREAM CHEESE FROSTING | |
4 c. Golden Supreme apples, peeled and diced 3 eggs, beaten until smooth 2 c. sugar 1/2 c. oil 1 tsp. salt 2 tsp. vanilla 1 tsp. baking soda 2 1/2 tsp. cinnamon 1/2 tsp. nutmeg 2 c. flour 3/4 c. chopped nuts Mix ingredients, adding one at a time in the order given, except add apples last. Batter will be hard to stir when apples are added. Grease a 8 x 13 inch pan. Bake in preheated 325 degree oven for 55-60 minutes. Cake will have a crusty layer on top when cooled. CREAM CHEESE FROSTING: 4 tbsp. butter 1 sm. cream cheese, soft 2 c. powdered sugar 1 tsp. vanilla 1/8 tsp. salt Mix ingredients with electric mixer until smooth. Spread on cooled cake. Store in refrigerator. |
