CHEESECAKE 
20 graham cracker squares, crushed or 1 3/4 c. graham cracker crumbs
2/3 cube butter
1/3 c. sugar
1/3 tsp. cinnamon

Mix together and pack on bottom of pan (use spring pan or square glass pan).

FILLING:

2 lg. Philadelphia cream cheese, soften the cream cheese, but do not use the "soft" cream cheese
1/2 c. sugar
2 eggs
2 tsp. vanilla

Beat together slowly. Pat filling in crust and bake at 350 degrees for 20 minutes.

TOPPING:

2 c. sour cream
2 tsp. vanilla
8 tbsp. sugar

Mix together. Carefully spoon over filling and bake 5 minutes at 400 degrees to set cheesecake. Let cool, then refrigerate for several hours or overnight.

NOTE: I always beat the eggs first, add the sugar and vanilla; mix well. Then add the cream cheese last.
