LEFTOVER MASHED POTATOES 
3 c. left over potatoes
Salt & pepper to taste
1/2 c. sour cream
2 tbsp. chives
1 egg, slightly beaten
1/2 c. shredded Swiss or cheddar cheese
4 slices bacon, cooked & crumbled

Mix all ingredients together, except cheese and bacon and place in a greased baking dish. Sprinkle cheese and bacon on top. Bake at 350 degrees for 30 minutes.
