ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
1 c. sugar
2 c. grated peeled zucchini
3 tsp. vanilla
3 c. flour
1 tbsp. cinnamon
1 tsp. salt
1 1/4 tsp. baking powder
1 tsp. baking soda

Beat eggs and add oil, sugar, zucchini and vanilla blending thoroughly. Add flour, cinnamon, salt, baking powder and soda; beating until well blended. Pour into two greased and floured 9x3x5 inch loaf pans. Bake at 325 degrees for 1 hour. Cool 5-10 minutes. Remove from pans onto cooling racks.
