BIRD'S NEST CHICKEN FOR TWO | |
1 lg. chicken breast 1 lg. onion 1 stalk celery 1 c. instant rice 1 lg. green or red pepper 1 sm. can mushrooms Vegetable oil Cut chicken meat off breast and cut into small pieces. Sprinkle with salt and pepper. Heat oil in skillet and brown chicken pieces well. Remove chicken from pan. Cut up peppers, onions and celery. Add a little more oil to pan and cook vegetables until tender. Add mushrooms and a little water and cook about a minute more. Stir in chicken and mix well. Serve on prepared instant rice. |
