THE ULTIMATE CARROT CAKE 
2 c. sugar
2 c. flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
4 lg. eggs
1 1/2 c. salad oil
2 c. grated carrots
Add more spices below

TOPPING:

1 lg. cream cheese
1/4 c. butter
1/2-1 box powdered sugar
1 tsp. vanilla
1 c. sliced walnuts

Grease sheet pan 13 x 9 inch. Preheat oven to 350 degrees. Mix all dry ingredients and sift. Beat eggs and oil together. Add to dry ingredients; mix well. Add carrots last and mix. Add extra cinnamon, cloves, nutmeg and allspice if desired or Pumpkin Pie Spice. Mix until dark as desired. Bake for 30 minutes or until brown. Cool.

Frosting: Cream together cheese and butter. Add remaining ingredients and mix until smooth. Frost cooled cake - add only enough powdered sugar for consistency of frosting.
