GREEN BEANS AND TOMATOES 
2 tbsp. olive oil
1 sm. onion, coarsely chopped
1 clove garlic, crushed
1 lb. (3 med.) ripe tomatoes, skinned & coarsely chopped
Salt & pepper to taste
1 lb. green beans, stems removed, 2" pieces
2 tbsp. fresh basil leaves or 1/2 tsp. dried basil

Film skillet with oil. Add onion and cook 1-2 minutes over medium heat or until translucent. Stir in garlic, then tomatoes, salt and pepper. Stir 3 minutes or until tomatoes give up their juices.

Add green beans. Reduce heat to low, cover and cook 5-10 minutes or until beans are tender-crisp, with salt and pepper.) Serve hot or cold.
