FLUFFY PANCAKES 
2 c. sifted flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
1 egg
1 1/2 c. milk
3 tbsp. melted butter

Sift together in large mixer bowl flour, baking powder, salt and sugar. Beat egg in small bowl on high speed for one minute. Add milk. Pour over dry ingredients. Beat on low speed only until blended, scraping bowl. Quickly blend in melted and cooled butter (and 1/2 teaspoon vanilla if desired.)

Fry 2 to 3 minutes at 380 degrees. Makes about 2 dozen.
