LIGHT AND FLUFFY PANCAKES 
2 tbsp. butter
1 c. flour
1 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg
1 c. milk
2 tbsp. oil

Melt butter. Combine flour, sugar, baking powder, and salt. Beat together melted butter, egg, and milk. Stir wet ingredients into dry until just combined. It's all right if batter is lumpy. Heat large frying pan over medium high heat until hot. Brush pan with the 2 tablespoons oil. Makes 8 pancakes.
