RED VELVET CAKE 
2 1/2 c. all-purpose flour
1 1/2 c. sugar
1 c. buttermilk
1 tsp. vanilla
1 or 2 (1 oz.) bottles red food coloring
1 tsp. baking soda
1 1/2 c. oil
2 eggs
1 tbsp. vinegar

Sift flour, baking soda and sugar together. Mix oil, buttermilk, eggs, vinegar, vanilla and food coloring together and pour into flour mixture. Cook at 350°F for around 30 to 35 minutes.

Icing:

1 (1 lb.) box powdered sugar
1/2 c. (1 stick) butter
1 c. nuts
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla

Mix cream cheese and butter (soft); gradually add powdered sugar, vanilla and nuts.
